Recently I've discovered a new blog full of yummy recipes. I actually found it because I was looking a recipe for coffee of which I will tell you another time. But this one caught my attention because I'm a big zucchini lover. Every summer our garden is filled by them and I want to include them in our daily meals as much as I can. This one was similar to the one I've already been making, this one just adds coconut and chocolate which I think it's a perfect combination.
Here is the original recipe: Vegan Coconut Zucchini Bread
And here is my version of it:
Ingredients:
260g flour
130g brown sugar
120g coconut flakes
1 teaspoon baking soda
1/2 teaspoon baking powder
a little cinnamon and salt
250ml milk
130g butter (melted)
zucchini (grated)
dark chocolate
Directions:
You just mix all the ingredients together and put it in the baking tray (oil it first) and bake in the oven on 180°C for 1 hour and 15 minutes (time may vary).
I can't tell you how much zucchini I added because I don't have a measure. The more you add the more liquidy your batter will be. If you want more thick just add more flour or coconut flakes.
I did the original vegan recipe and it's really good, but I think the one with no additional flavour extract is really good as well.
